Soft Sesame Bars

Soft Raw Sesame Bars (Fridge Version)

A nourishing, ancestral sweet made with only two ingredients — and traditional preparation for optimal digestion.

Ingredients

  • 2 cups activated sesame seeds (unhulled for minerals, or hulled for gentler digestion)
  • ⅓ cup raw honey (adjust to taste)
  • Pinch of sea salt
  • Optional:
    • Poppy seeds
    • Zest of ½ orange (unwaxed)
    • 1–2 tbsp chopped nuts (preferably also activated)

Notes:

Activated means the seeds have been soaked and dried.

Organic sesame seeds are ideal but not required.

These bars are soft and will only keep their shape if they’re stored in the fridge. I store mine in the cooler compartment of my fridge.

Method

  1. Optional Toasting: Toast the activated sesame seeds in a dry pan over medium-low heat for 2–3 minutes, stirring constantly. Let cool.
  2. Mix with Honey: Gently warm the raw honey just until loosened (do not boil). Stir in salt and optional zest. Mix with the cooled sesame seeds until evenly coated.
  3. Shape and Set: Pour onto greased parchment or silicone mat. Cover with another sheet and flatten to 0.5–1 cm thick using a rolling pin. Slice into bars while warm and pliable. Cool completely before storing.

Storage

Store in an airtight container in the fridge for up to 2 weeks.
