Tahini Halva (Honey only)

Traditional Tahini Halva (Honey‑Only)

Crumbly, grainy, and deeply satisfying. This classic Mediterranean confection is made from just two ingredients: sesame tahini and honey. The secret to its irresistible texture lies in heating the honey to the right stage and mixing it quickly into tahini so it seizes and crystallises just enough.

Equipment

  • Candy thermometer
  • Heavy‑bottomed saucepan
  • Heatproof mixing bowl
  • Silicone spatula or sturdy wooden spoon
  • Parchment‑lined loaf tin or tray (roughly 20×10 cm)

Ingredients

  • 300 g (1¼ cups) tahini — smooth, well‑stirred
  • 200 g (⅔ cup) runny honey
  • Optional: pinch of fine sea salt
  • Optional: chopped toasted nuts, cardamom, cocoa swirl, vanilla, or rose petals

Method

  1. Prepare tin & tahini
Line a loaf tin or small tray with parchment paper. Spoon the tahini into a heatproof mixing bowl and gently warm it (optional but recommended) by placing the bowl over a pot of warm water (bain‑marie) for a few minutes. This makes it easier to mix and helps achieve even crystallisation. Stir in a pinch of salt if using.
  2. Heat the honey
Pour the honey into a heavy‑bottomed saucepan and set over medium heat. Clip the thermometer to the side of the pan (the tip should sit in the honey but not touch the bottom). Heat the honey without stirring until it reaches 124–126 °C (255–260 °F) — this is the firm‑ball stage, crucial for achieving the crumbly texture.
📌 Be precise: If it’s too cool, the halva will be soft and fudgy. Too hot and it may become brittle.
  3. Combine & seize
As soon as the honey reaches the target temperature, remove it from the heat and immediately pour it over the warmed tahini. Stir briskly and firmly with a spatula or spoon until the mixture thickens, turns grainy, and pulls slightly away from the sides of the bowl. Work quickly — the mixture will seize fast!
  4. Press & set
Scrape the halva into the prepared tin and press it down evenly and firmly with the back of the spatula. Sprinkle over any desired toppings while still warm. Leave to cool completely at room temperature for at least 3–4 hours (or overnight) to allow it to fully set and crystallise.
  5. Slice & enjoy
Once fully set, lift out by the parchment and slice with a sharp knife into bars or squares.

Tips for the Crumbliest Possible Honey Halva

  • ✅ Use a thermometer and aim for 124–126 °C — precision is key.
  • ✅ Warm the tahini slightly before mixing to prevent premature seizing.
  • ✅ Work quickly but don’t overmix once it begins to seize — that can break the crystalline structure.
  • ✅ Let it rest at room temperature (not fridge) to allow proper crystallisation.
  • ✅ Store in an airtight container at room temperature for up to 2 weeks.

A Note on Honey

Heating honey above ~40 °C destroys its raw enzymes and antioxidants, so this recipe does not preserve honey’s raw benefits. Even so, it’s still a more natural, nourishing sweetener compared to refined white sugar — and gives a gentler sweetness and beautiful floral flavour.
