Soft, Wobbly Jello
Equipment
- Small bowl for blooming
- Small saucepan
- Whisk
- Jars, ramekins, mini pots, or a shallow dish
Ingredients
- ½ cup liquid- I used coconut water (see variations below)
- 2-2½ tsp grass‑fed bovine gelatine (suitable for gelling, not collagen peptides)
- 1–2 tsp raw honey or maple syrup (optional, to taste)- Here I didn’t use any.
- Optional:
- Up to ½ cup fruit purée (replace an equal part of liquid)- For this recipe I pureéd a small dragon fruit.
- A handful of chopped fresh fruit to scatter in the moulds. For this recipe I sliced up some blueberries.
Method
- Bloom the gelatine
Pour ⅓ cup of the liquid (cold or at room temperature) into a small bowl. Sprinkle the gelatine evenly over it and leave for 5–10 minutes to bloom. - Warm and dissolve
Gently heat the remaining ⅔ cup of liquid over a low heat — just warm enough to dissolve the gelatine, never boiling. Stir in honey or maple syrup if desired. Whisk in the bloomed gelatine until fully dissolved. - Cool if needed
If using delicate ingredients like raw milk, yoghurt or kombucha, allow the mixture to cool below 40 °C before stirring them in, to preserve beneficial enzymes and probiotics. Stir in fruit purée now if using. - Assemble and set
Scatter chopped fresh fruit, if using, into individual jars, ramekins, mini pots with lids, or a shallow dish. Pour the liquid over. Refrigerate for 1–2 hours until softly set. - Serve and store
Keep covered in the fridge and enjoy within 3 days, especially if made with dairy or fresh fruit.
Serving Tip
For an elegant and convenient presentation, pour the mixture into small individual jars, ramekins, or lidded pots before chilling. This makes portable, single‑serve portions that are perfect for snacks or lunchboxes.
Variations
- Juice‑Based: Use apple, grape, pomegranate, or cherry juice for a refreshing fruity jello.
- Coconut Water: Light and hydrating, with fresh berries added to the moulds.
- Raw Milk or Yoghurt Mix: Use half raw milk or yoghurt with half water or herbal tea. Cool the mixture before adding.
- Kombucha: For a tangy, gut‑supporting twist — cool the mixture before stirring in kombucha.
- Fruit Purée: Replace up to half the liquid with puréed fruit for a velvety, more intense flavour.
- Electrolytes: I’ve made jello with just electrolyte powder in water. I use IQmix on LMNT. They have very refreshing flavours.
- Plain Filteted Water: If youre using honey in the jello, you csn even get away with plain water.
